Sharpening is alone the most important part of woodworking and knife use. It greatly affects how any tool or knife performs. Being able to sharpen tools & knives quickly and efficiently at will is a great benefit to any woodworker, chef or artisan.
Also, a blunt chef knife or pocket knife is simply dangerous. Why? Because the extra effort required or employed to cut with a blunt knife is the main cause of injury due to slipping from the unnecessary push or pressure used.
